I was listening to Pandora yesterday while scrapbooking and this song by Natasha Bedingfield called Happy came on. The chorus really touched me and made me realized how blessed I am. I have so many beautiful reasons to be happy and I couldn’t ask for more! These are a few things in my life that makes me happy:
I have an amazing group of friends! We love and genuinely care for each other! Seriously, these people will be there for ANYTHING you need! ANYTHING at ANY TIME! They’ve taught me how to be a good friend, how to be a good listener, how to love, and accept people for who they are. They’ve pushed me and encouraged me to do things I never thought I could do, like run a half marathon! Each of us are different in our own way but one thing brings us together, God, love, and a desire to love and help other people.
Having a healthy body that lets me be active in all sorts of way. Wether i’m training for Jiu-jitsu, riding my bike, playing golf, running a half marathon, or participating in paintball war…. I’m happy to have a body that works. I don’t ever limit myself to just one activity, I believe in trying out everything. I run, I play volleyball, I bike, I swim, I golf, I try to play soccer (lol) because I can. And that makes me so darn happy!
I have an awesome family, from both sides! They have shown me so much love, it’s crazy! They all spoil me with love. I cannot thank God enough for them, they are precious gifts to me from above. They make me so happy.
My husband and best friend Scott. He makes me sooo stinkin’ happy! He’s supportive, loving, caring, funny, geeky, and every day is an adventure with him. I’m never bored with him, seriously! Moving away from all from my family and friends was really hard for me. He shared that burden with me. It’s been almost two months since we left Brownsville and it’s gotten a lot better. He really helped me get through the transition. I’m so grateful for this man. He takes care of my heart.
Last but not least, the blog world makes me happy. You all have really help get through a lot of things, you have no idea. I am more responsible with my health because of you guys. Your posts encourage me, makes me laugh, makes me think, and they make me really happy
. I look forward to reading y’alls posts every single day. It’s nice to have friends online

Hey folks! Sorry it’s been awhile! But I am ALIVE! Been really busy and if I do get some time to blog, laziness takes over me and all I want to do is be lazy, not wanting to do anything! You’ve been there before? I’ve missed the blog world though and I have been reading some of y’alls posts these past week.
Want to make a shout out to my girl, Diana, have fun in Disney World and eat your face off! Ok, enjoy the foods but just don’t make yourself sick, k? LOL. Be safe! Can’t wait to read all your recaps!
I’ve been such a busy bee these past week/weekend. First of all, the husband took me out on a big date in the city this past weekend! We went to Houston’s Garden Center, Museum of Natural Science, and ate some awesome greek food!!! Here are some pictures.
They had amazing bed of roses.

Homemade hummus and freshly baked warm pitas and pita chips. YUMMMY!
Greek salad is my favorite and this one blew me away! Their feta cheese was awesome!
Scott and I wanted to try everything so we got this platter. It has a bit of everything. Eggplant lasagna, grape leaves, grilled lamb, spinach pie, greek meatballs, tzatzaki, and some pasta dish. I wasn’t too crazy about the grape leaves, it was my first time trying it. Everything else was amazing, esp. the eggplant lasagna (pastaless). We took half on it home, it was a lot of food and we were full from the hummus, pitas, and salad.
Probably the only beer I can drink. I’ve tasted other beers before and this one taste the best to me. It doesn’t leave that funky after taste in my mouth. Scott and I shared this one and we still didn’t finish it! lol. I’m not a drinker at all but will have one occasionally.
We are flying to Brownsville Wednesday evening night to see these two beautiful people get hitch on Thursday!
I’ve been working on two scrapbooks this week. One for them and the other one for my best friend. Today is her birthday and I’m surprising her with a homemade gift when I get there
. Both of them are actually a surprise so I’ll post some pictures later. I’ve got a messy room just like this one, it’s hard to keep your area clean and organize when you’re scrapbooking. I don’t know how many times I lose scissors, glues, and pictures in all the mess. lol.
I took up scrapbooking about two years ago but haven’t been consistent with it. I really enjoy it though. It lets me be creative and at the same time I’m forced to organize all our pictures. I still have pictures from four years ago that needs to be printed out from our computer! LOL.

I want to try shopping online. Have any of y’all done it? I’m chillin’ at home on a Saturday evening, browsing through some clothes, accessories, etc. I found a few things I like and thinkin’ of buying it in the near future.
I’ve been itchin’ to buy some nerd glasses. I think they’re really cute and can look really chic! Geeky chic that is.

Went to NY & Co. today with friends and tried this crop pants. I’ve been searching for the perfect white crop pants and I love the way these fit on me! I didn’t want to buy ‘em out of impulse so I’ve decided to sleep on it. If I’m still thinking about these pants this week, I’ll probably go get ‘em. If they they don’t have my size then I’ll order ‘em online.

I meant to blog yesterday but I got caught up with chores here at home. By the time I got some down time, I was tired and all I wanted to do was relax with Scott and watch a couple of movies he brought home after work. We watched Legion and Edge of Darkness. Legion was alright but I really liked Edge of Darkness with Mel Gibson. Speaking of Mel Gibson, the people of Brownsville (my hometown) were all gathered in downtown area yesterday because they were shooting a movie with Mel Gibson in it. My dear friend, Giana, took this photo as he was walking towards the crowd to shake their hands. She got to shake his hand
. She’s a big fan of his and was really happy to see him in person. I’d probably be too, he’s a great actor!
I just got done eating lunch and boy was it good! I made a big bowl of salad mixed with greens, baby spinach, cucumbers, carrots, red onions, baked shrimp, and a dollop of yogurt cucumber garlic tzatziki – goooood stuff!
I marinated the shrimp in EVOO, lemon, honey mustard, garlic powder, salt, and pepper. I then baked it in 400* for about 15 min. I broiled it for the last 5 min. It was delicious and flavorful!
I went to Wal-Mart, again, to pick up a couple of things. I bought these:
I like ‘em all! LOL. The Wasa fiber crisp bread is really light and not too crunchy, which I like. I wouldn’t suggest eating it by itself, it needs to go with something ’cause it really doesn’t taste like anything. It’s good with the yogurt dip and laughing cow cheese. The cucumber garlic yogurt dip was really good! First time I’ve ever tried it and it’s really good on your salad, veggies, or crackers. Eat it however you want, it’s good! Annie’s Bunny Grahams Chocolate is the perfect dessert. I wanted something healthy, chocolate-y, and light – this was perfect! Lastly, THE ORGANIC BATTER BLASTER! Scott and I bought a can a couple of months ago just to try it out. Surprisingly, it was delicious and fluffy! I woke up this morning craving hot pancakes and strawberries, I didn’t want to go through all the trouble of using a bowl and mixing the batter together to make pancakes. This is great! Bowl, whisk, and mess free!
Have any of you tried these products before? I loooove finding and buying new eats, it’s adventurous!

I’ve been feeling a little homesick these past few days. First time I felt like this since we moved away which was about a month ago. I miss my friends, my family, my church family, and the beach. I miss my best friend a lot too.
I talked to her sometime last week and she’s going through something hard right now. It breaks my heart to be so far away from her. She’s getting surgery this Friday to hopefully fix a major health problem and I really wish I could be there for her. Please keep her in your prayers. I know God is taking care of her and I have a feeling everything will be fine. I really need a good crying session right now, I’ve been tearing up for every little thing. Commercials, movies, memories, etc. I’m going crazy! Or should I blame it on the hormones? My mood lately reminds me of the famous song from an old cartoon movie, An American Tail. Ya’ll remember that movie? I remember crying so much, it was so sad.
I’m waiting from the physical therapy assistant school I applied to this week to see if I got in the program. That’s also been very stressful for me. This is a big deal in my life right now. Scott and I really want to stay in the Houston area and I really want to get into that school. If I don’t, all the plans we made will have to change. I will have to apply for a school in Corpus Christi, my baby brother is currently in that program right now. I don’t really want to live in Corpus Christi but I will if I have to. We’ll see what my future holds, I’ll keep you guys updated.
I finally got a hold of my favorite peanut butter yesterday! Went to Wal-Mart to pick up some groceries and saw that they sell Naturally More PB. I usually order them online and they’re not cheap at all. I made a glass of banana and peanut butter protein smoothie last night after my workout. It was so good! I used frozen bananas, it made it really smooth and creamy, like a milkshake

Been trying to eat light for dinner. By the time we get home from kickboxing and jiu-jitsu class it’s 9pm, too late to eat a meal. This was my dinner last night. Baked half Orowheat sandwich thins with a tbsp. of pizza sauce, chopped yellow squash zucchini, portobello ‘shrooms, fresh spinach, italian mix cheese, and a sprinkle of tomato and basil feta cheese (my fav!). I then drank a glass of my banana and pb protein smoothie and some water. Didn’t get to bed ’til midnight last night, was waiting for the food to settle down. I hate going to bed after I eat.
Dinner tonight will consist of eggs and edamame beans. Bought a bag of frozen edamame beans yesterday and I’ve been dying to eat ‘em! I loooove simple and nutritious meals

Teenage girl #1: “I’m so fat!”
Teenage girl #2: “No you’re not! I’m fat! You’re so skinny!”
I overheard these two teenage girls in the bathroom mall this past Friday talking about how fat they are while they fixed their hair and put make up on. It made me so sad to hear them talk like that because these girls, who were about 14 or 15 years old, were stick and bones. I looked like a giant next to them and here they were talking about how fat they look! Wow! I walked out the bathroom and Scott overheard their whole conversation as well. He looked at me and said, “I feel bad for those girls”. I really do believe the media plays a big part on these young girls’ lives and it makes me really sick because I was once in their shoes. Before, when I purchased a Women’s Health magazine I would always compare myself to all these “perfect” women in there. I would actually let the magazine make me feel bad about myself! Now that’s just messed up! But I let it happen and it was my fault. I wasn’t secure in my own skin and I didn’t love myself. I had to shut off all the lies in my head and focused on what was true. The lies in my head were: I need to have the perfect body, I need to look like her, I’m not beautiful, I need to fit into skinny jeans, I need to have perfect hair, skin, etc. These were all lies that brought me down and are affecting other million girls and women all around the world and they are everywhere! I’m really tired of fat talk and I really wish I could’ve said something positive to those girls in the bathroom. Next time I’m going to leave an operation beautiful note on the bathroom, who knows maybe those girls will see it next time they visit the bathroom mall.
My best friend likes to have fat talks, I hate it, I really do. I hate talking bad about our body and I used to do it a lot before but I really worked on not doing it anymore. It got old and I was just hurting myself. I have nothing, nothing to gain from my insecurities and fat talks. So every time she starts talking about about herself, I tell her, “No more fat talk! You’re beautiful!” It works!
I’ll be back soon with a weekend recap post. I’m exhausted and I’m been suffering with migraine and tension headache all weekend long. I hope everyone had a really good weekend!

First gardening experience

I visited Ikea for the first time in my life Saturday evening. Scott warned me that it’s huge and it would take awhile to get through the whole store. I didn’t believe him. We got there at about 7p, on a semi empty stomach, and excited to see different decors/furnitures. The first thing I noticed when we got inside was the restaurant. What the heck?! I’ve never ever been to a furniture store with a restaurant inside! Not even halfway through the store, my stomach starts grumbling. I ignored it and kept walking. About 10 min. later the hunger pangs started and right away I knew I wasn’t going to survive our Ikea trip. Scott wasn’t kidding when he said Ikea is huge and would take us awhile to get through it. We only got to see 1/3 of the store and took us about 15 min. to get out of the building. There’s only ONE WAY to get out and there are no shortcuts. Next time I visit, I’ll make sure that I’ve eaten before and keep snacks in my purse with me. I usually like to bring bars or fruits and a bottle of water with me when I go out but I guess I forgot this time around. By the way, I have friends who rave about their swedish meatballs.
I actually saw a sign for it when I entered Ikea and it looked really good! I’ll try it out next time we go. Have any of you all been to an Ikea? They have some really cute stuff! I told Scott that whenever we build our own house, I want him to customize our kitchen and it will be his gift for me
. I don’t have the perfect kitchen layout in my head yet but I have a few ideas. It’s going to be awhile though ’til we can afford to build our own house. This is kinda cute. I like the dark wood, the island in the middle, and plenty of shelves/cabinets. Plenty of counter space is very important to me too!
We had dinner at Dave and Busters after Ikea. Spent a few hours there and then headed to the in-laws to spend the night. We promised my MIL that we’ll help her clean out her front garden and plant flowers and a couple of bushes. This is my first time gardening and I actually had a lot of fun! Scott has been reading up on gardening these past few months and he shared a couple of interesting information with me while we were gardening about earthworms. He told me that earthworms are like farmers who work 24/7, they help to “turn” the soil bringing down the organic matter from the top and mixing it with the soil below. Interesting huh? Yea, we’re really geeky like that. LOL. We hope to build our own vegetable garden one day whenever we have our place. Anyway here are a couple of before and after pictures of the front garden that my MIL took yesterday.
It will look really good whenever the bushes and flowers grow out. I really enjoyed doing this project. We’re going to tackle the backyard next time.
By the way, I really miss posting some of my eats on here. I haven’t made anything great lately. We’re staying with Scott’s grandparents while I find out if I get into physical therapy assistant school here. Their oven is broken and I’ve been doing a lot of cookin’ on the skillet. I like cooking things in the oven, I miss it. Anyway, I have an interview tomorrow, Tuesday at 12p with the director of the PTA program. Out of 106 applicants, they are interviewing 42 of them including myself and they will choose 24 students to be in the program. I’m really nervous because I’m afraid I’m going to say something stupid. I know, just be myself and everything else will take care of itself. Wish me luck everyone! I should be finding out if I got in the program in the middle of June. I’ll keep you guys posted!

I’ve been getting a few health e mails from friends lately. I’m really lovin’ it! When I was living in Brownsville, I often shared interesting health facts to my friends. I’m sure they got annoyed by it a few times, but I only did it because living a healthy life means a lot to me and I cared about their health. I made a choice of choosing a healthier lifestyle two years ago and it made nothing but positive changes in my life! I wanted my friends and family to experience what I experienced and so I opened by mouth. I encouraged and educated them on healthy eating and the importance of exercising. I also shared with them not to see food as a reward but to see it as fuel and a need for our body to function well. I never forced my way of living on them, oh no I would never ever do that! I let them choose the kind of life they want. Eventually, they started making small changes in their lives and I saw it! I would acknowledge them and continue to encourage them because it is hard changing a lifestyle you’re used to. It helps a lot when you have someone to encourage you to keep going, to keep pushing and not give up. I strongly believe we all play a big part in each others’ lives and I will continue to be an encourager and a motivator, changing one life at a time ’til the day I die.
So now, let me share this e mail I got from my dear friend, Erik. I loooove Dr. Oz, I think he’s intelligent and has a lot of passion in changing people’s lives. This e mail is about eating fruit that right way. It’s very interesting but there are some stuff I don’t completely I agree with. I’d like to know your opinion on this.
EATING FRUIT
We all think eating fruit means just buying fruit, cutting it up and popping it into our mouths. It’s not that easy. It’s important to know how and when to eat fruit.
What’s the correct way to eat fruit?
IT MEANS NOT EATING FRUIT AFTER A MEAL! FRUIT SHOULD BE EATEN ON AN EMPTY STOMACH.
Eating fruit like that plays a major role in detoxifying your system, supplying you with a great deal of energy for weight loss and other life activities.
FRUIT IS THE MOST IMPORTANT FOOD.
Let’s say you eat two slices of bread, then a slice of fruit. The slice of fruit is ready to go straight through the stomach into the intestines, but it’s prevented from doing so.
In the meantime, the whole meal rots and ferments, and turns to acid. The minute the fruit comes into contact with the food in the stomach, and digestive juices, the entire mass of food begins to spoil.
Eat your fruit on an empty stomach, or before your meal! You’ve heard people complain: Every time I eat watermelon I burp, when I eat durian my stomach bloats, when I eat a banana I feel like running to the toilet, etc. This will not happen if you eat the fruit on an empty stomach. Fruit mixes with the putrefying other food and produces gas. Hence, you bloat!
There’s no such thing as some fruits, like orange and lemon are acidic, because all fruit becomes alkaline in our body, according to Dr. Herbert Shelton who did research on this matter. If you have mastered the correct way of eating fruit, you have the Secret of Beauty, Longevity, Health, Energy, Happiness and normal weight.
When you need to drink fruit juice drink only fresh fruit juice, NOT the concentrated juice from the cans. Don’t drink juice that has been heated. Don’t eat cooked fruit; you don’t get the nutrients at all. You get only the taste. Cooking destroys all of the vitamins.
Eating a whole fruit is better than drinking the juice. If you should drink the juice, drink it mouthful by mouthful slowly, because you must let it mix with your saliva before swallowing it. You can go on a 3-day fruit-fast to cleanse your body. Eat fruit and drink fruit juice for just 3 days, and you will be surprised when your friends say how radiant you look!

I got this interesting and informative e mail from my dear friend Katie regarding water and coke (regular & diet). I hope you all find this interesting as well and encourage y’all to hydrate more with H2O.
WATER
#1. 75% of Americans are chronically dehydrated..
(Likely applies to half the world population)
#2. In 37% of Americans, the thirst mechanism is so weak
that it is mistaken for hunger.
#3. Even MILD dehydration will slow down one’s metabolism as 3%.
#4. One glass of water will shut down midnight hunger pangs
for almost 100% of the dieters studied in a University of
Washington study.
#5. Lack of water, the #1 trigger of daytime fatigue.
#6. Preliminary research indicates that 8-10 glasses of
water a day could significantly ease back and joint pain
for up to 80% of sufferers.
#7. A mere 2% drop in body water can trigger fuzzy short-term
memory, trouble with basic math, and difficulty focusing on
the computer screen or on a printed page.
#8.. Drinking 5 glasses of water daily decreases the risk of
colon cancer by 45%, plus it can slash the risk of breast
cancer by 79%., and one is 50% less likely to develop
bladder cancer. Are you drinking the amount of water

COKE
#1. In many states the highway patrol carries
two gallons of Coke in the trunk to remove blood from
the highway after a car accident.
#2. You can put a T-bone steak in a bowl of Coke
and it will be gone in two days.
#3. To clean a toilet: Pour a can of Coca-Cola into the
toilet bowl and let the ‘real thing’ sit for one hour,
then flush clean. The citric acid in Coke removes
stains from vitreous china.
#4. To remove rust spots from chrome car bumpers:
Rub the bumper with a rumpled-up piece of Reynolds
Wrap aluminum foil dipped in Coca-Cola.

into the load of greasy clothes, add detergent, and run
through a regular cycle.. The Coca-Cola will help loosen
grease stains. It will also clean road haze from your
windshield.
FOR YOUR INFORMATION:
#1 the active ingredient in Coke is phosphoric acid.
It will dissolve a nail in about four days. Phosphoric
acid also leaches calcium from bones and is a major
contributor to the rising increase of osteoporosis.
#2. To carry Coca-Cola syrup! (the concentrate) the
commercial trucks must use a hazardous Material place
cards reserved for highly corrosive materials.
#3. The distributors of Coke have been using it to clean
engines of the trucks for about 20 years!
Now the question is, would you like a glass of water? or Coke?
I personally don’t like to drink coke or any kind of soda but once in awhile I do get a craving. I usually turn to diet coke/pepsi. Even though I only drink it once a week, usually a weekend, I know it’s toxic to my body and it’s not doing me any good. I’ve been wanting to stop drinking it for awhile now. Reading these information makes me want to stop drinking it more!
